According to Wikipedia, the bagel is a product traditionally made of yeasted wheat dough in the form of a ring which is boiled in water and then baked. The result is a dense, chewy, doughy interior with a browned and sometimes crisp exterior. This is what Michael Storrings’ bagel is all about: a hand-formed boiled bagel, stuffed with a layer of cream cheese, lox and cucumbers. Legend has it that in 1683 in Vienna, Austria, a local Jewish baker wanted to thank the king of Poland for protecting his countrymen from Turkish invaders. He made a special hard roll in the shape of a riding stirrup-Bugel in German – commemorating the king’s favorite pastime and giving the bagel its distinct shape. The bagel grew to immense popularity in Poland and when the Eastern European Jewish immigrants arrived in North America, they brought the bagel with them. Hand-blown and hand-painted in Poland.
